Advancements in communication and transportation both give people the desire to try sushi (because they hear about it, see it on TV and so on) AND make it easier for them to satisfy their desire to try sushi (because people who know how to make it, instructions on how to make it, and the ingredients needed to make it can all move around the globe more easily).
